Festival Recipe

Festival is a sweet, fried cornmeal-based dough that is often served as a side dish with jerk meats. It has a slightly sweet flavour and a crispy exterior with a soft, fluffy interior. Found alongside jerk chicken or pork, it’s common in jerk centres or with street vendors. It is very popularly served at Island Grill with the soup as well as jerk meats (chicken and pork.)

Ingredients:

  • 2 cups cornmeal

  • 1/2 cup all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp vanilla extract

  • 1 cup milk

  • 1 egg, beaten

  • Vegetable oil (for frying)

Instructions:

  1. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.

  2. Add the milk, egg, and vanilla extract, and stir to form a dough.

  3. Heat vegetable oil in a frying pan or deep fryer over medium heat.

  4. Take small portions of dough and shape them into oval patties.

  5. Fry the patties for 4-5 minutes on each side, or until golden brown.

  6. Drain excess oil on paper towels and serve as a side dish with jerk chicken or pork.
